Easy Egg Salad

Looking for a quick, healthy, and delicious meal? This egg salad recipe, made with yours truly, is the perfect option for a satisfying lunch or snack. Packed with flavour and creamy goodness, it's an easy way to enjoy the nutritional benefits of our delicious eggs!

Ingredients

  • 6 eg. free range eggs
  • 1/2 cup mayo
  • 1 tablespoon mustard
  • 1 tablespoon chopped fresh dill
  • 1 tablespoon lemon juice
  • Salt and pepper to taste
  • Optional: Chopped veggies (e.g., celery, red onion)
  • Optional: Avocado for added creaminess (great for healthy egg salad)

Method

  1. Place eg. free range eggs in a pot, cover with cold water, and bring to a boil. Once boiling, remove from heat and let sit for 10-12 minutes to achieve hard-boiled eggs.
  2. Peel and chop the hard-boiled eggs into bite-sized pieces.
  3. In a bowl, combine mayo, mustard, lemon juice, and fresh dill. Stir to combine.
  4. Optional: Add chopped veggies or avocado for extra flavour and creaminess.
  5. Gently fold in the chopped eggs. Season with salt and pepper to taste.
