eg. Eggnog from "becoming an eggspert" Chrissy Edition
INGREDIENTS
6x eg. free range egg yolks only
1/2 cup sugar
2 cups milk
1 cup (heavy) cream
1/2 tsp Nutmeg
1 tsp Cinnamon
1 tsp Vanilla
Pinch salt
Whipped Cream & Kiwifruit to garnish
METHOD
Seperate egg yolks and add them to a bowl.
Add sugar and whisk together. Set aside.
Add milk and cream to saucepan on low-medium heat.
Add spices and salt to milk base and mix together.
Keep stirring until mixture is almost simmering.
Remove from heat and a spoonful at a time add the warmed milk base into the egg yolk mixture, continuously whisking to avoid any scrambling!
Continue adding a spoonful at time until the milk base is full incorporated into the egg mixture.
Add mixture back to saucepan on a low heat and add your vanilla.
Heat and stir until mixture starts to slightly thicken, about 70 degrees. Be careful not to boil the mixture. It will thicken more when it cools too.
Cool mixture in fridge.
Once cooled, add to your preferred glass. Top with whipped cream and a slice of Kiwifruit to bring the Kiwiana Chrissy spirit!
