Fluffy Air-eggs from "becoming an eggspert"
Ingredients
eg. free range eggs
Chilli oil
Method
Pre heat oven to 180°C or 356°F
Separate eg. free range eggs into 2 separate bowls whites and yolks
(be careful not to break the yolk, be gentle).
Beat the egg whites with a whisk or beater
until they’re light and fluffy (nice and stiff).
Spoon light fluffy egg white on an ovenproof tray or dish that's line with baking paper to help with sticking.
Use the back of a spoon to make a little indent in the fluffy egg whites.
Gently place the egg yolk into each of the little moulds you made in the fluffy egg whites.
Place in the oven until golden brown on the edges.
Remove from the oven - serve and eat immediately.
Salt and pepper to taste.
Add some chilli oil, sprinkle chilli flakes, cheese, green onion, bacon.. for some extra JINGEES!!
